Ingredients:

  • 2 cups kumquat slices
  • 1 cup ice-cold water
  • 1 cup white sugar
  • 1/2 cup lemon juice

Step 1: Prepare the Kumquat Slices

Slice the kumquats lengthwise, remove the white membrane at the center, then scoop out the seeds. Be careful not to remove too much meat and juices.

Step 2: Mix the Marmalade Ingredients Together

Transfer the kumquat slices to a medium-sized bowl and squeeze the lemon juice all over the slices. Add a pinch sugar and cayenne to add an extra kick to the marmalade.

Mix the ingredients together, cover with a lid, then refrigerate overnight. This should be enough time for kumquat slices to absorb the extra spices.

Step 3: Boil the Ingredients

Once the slices are ready, take them out and transfer to a cooking pot. Heat the mixture over medium to high heat while stirring occasionally.
