How to Make Baked Oatmeal

Some recipes are more fun than other, but I have to warn you about this one – it is a TON of fun, and once you try my baked oatmeal, you will wonder how you ever got through a weekend morning without it. Not only is it easy to make, but it is healthy and delicious.

This recipe gives you so many choices that it reads like a Choose Your Own Adventure book. The nice thing about options is that it allows you to work with what you have on hand or tailor it to personal dietary needs, or you can just develop your own tried-and-true combination and stick with that.

The recipe shows exactly what I use in the ingredients list, but watch for the “…OR” for suggestions on how you can change it up to suit your own tastes.

YOU WILL NEED:

Supplies:

  • 2 mixing bowls: medium, small
  • A preparedness baking dish
  • mixing tools
  • measuring utensils.

Ingredients:

  • 1/2 cup melted salted butter… OR unsalted butter, margarine, or oil
  • 1/3 cup honey… OR sugar (any kind) or maple syrup, more or less or none at all
  • 2 farm fresh eggs… OR any eggs or egg substitute
  • 1 cup raw goat milk… OR any kind of milk at all, raw or not, animal or not, or cream or yogurt
  • 3 cups organic regular rolled oats… OR steel-cup or even quick type, for a texture variation
  • 2 teaspoons baking powder
  • 1 teaspoon salt

  • 1/4 cup chopped walnuts
  • 1/4 cup chopped pecans
  • 1/4 cup dried unsweetened cranberries
  • 1/4 cup dried blueberries
  • 1/4 cup unsweetened shredded coconut

Step 1

I usually use a glass 8-inch-square baking pan, but a 2-quart glass casserole or a large souffle dish also works great. Grease it lightly. I use homemade lard, but you can use butter or shortening or vegetable oil if you would rather.

Use the smaller of the two bowls to mix the wet ingredients:

Again, that is:

  • 1/2 cup melted salted butter… OR unsalted butter, margarine, or oil
  • 1/3 cup honey… OR sugar (any kind) or maple syrup, more or less or none at all
  • 2 farm fresh eggs… OR any eggs or egg substitute
  • 1 cup raw goat milk… OR any kind of milk at all, raw or not, animal or not, or cream or yogurt

Whisk all the wet ingredients together and set aside.

Step 3

Use the larger bowl for the dry ingredients:

  • 3 cups organic regular rolled oats… OR steel-cup or even quick type, for a texture variation
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Stir together, set aside, and prepare your add-ins.

This is where the real creativity comes into play. All of the following are merely suggestions. You can add more, or less, or something altogether different. Other kinds of nuts are fine, and the fruit possibilities are limitless. I like my own dried blueberries and some health-food-store cranberries, but you can add raisins, dried apples or bananas, or anything you like. If you aren’t sure how it will taste, just use a little for the first test batch, and go from there. You could even add a few chocolate chips if you were in the mood for breakfast chocolate.

  • 1/4 cup chopped walnuts
  • 1/4 cup chopped pecans
  • 1/4 cup dried unsweetened cranberries
  • 1/4 cup dried blueberries
  • 1/4 cup unsweetened shredded coconut

I save my unsweetened shredded coconut to add on top. You don’t have to do it that way – you can stir it into the mix, or leave it out altogether, but I like the way it toasts up nice and brown and smells delicious while it’s baking.

Stir the add-ins into the dry ingredients.

Add the wet ingredients to the dry and mix well.

Pour into your baking pan and smooth it out and flatten the top.

Sprinkle coconut on top of you want to.

Step 9

Bake at 350 degrees on a middle oven rack for 30 minutes.

Enjoy – and even at this stage, there are choices! I eat mine hot in a cereal bowl with milk. It’s also good cold without milk.
