Preparing Meat For Jerky-Making
Meat is easier to slice into thin strips when partially frozen for 30 minutes to 1 hour.
- For chewy jerky, slice with the grain.
- For tender jerky, slice against the grain.

Beef Jerky Marinade Recipe

- 1/3 cup soy sauce
- 1/4 cup brewed coffee
- 2 tbsp. Worcestershire sauce
- 1 tbsp. brown sugar
- 1 1/2 tsp. coarsely ground black pepper
- 1 tsp. liquid smoke
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1/2 tsp. pink curing salt (optional)
- 2 1/2 pounds lean beef, very thinly sliced
Place the beef in a large container and pour in the combined ingredients. Refrigerate for 8-48 hours.
Jerky-Making Methods
1. Smoker
Preheat to low (135 to 165°). Arrange strips in a single layer on wire racks or the grill grate. Turn occasionally, smoking time is about 4 hours.
2. Dehydrator
Preheat to 145° and arrange the strips on the racks. Dehydrate for 2 hours, then reduce the temperature to 125° and dehydrate about 4 more hours.
3. Oven: Method 1
Preheat oven to lowest setting and arrange the strips on the racks. Prop door open with a wooden spoon. Rotate the top and bottom pans every 1-2 hours, for 4-6 hours.
4. Oven: Method 2
Preheat oven to lowest setting. Run a toothpick through one end of each meat strip and suspend between rungs of the top oven rack so the meat hangs vertically over the foil-lined baking sheet. Bake for 4-6 hours.
