How to Make Meatloaf Wrapped in Bacon
A traditional meatloaf recipe is a delicious, classic meal. But meatloaf wrapped in bacon is a different story.
Bacon wrapped meatloaf is sort of like a present, except that the wrapping is the best part! What you've heard is true – bacon definitely makes everything better! Try out this simple meatloaf recipe from Add a Pinch.
Ingredients:
- 2 pounds ground beef
- ½ green pepper, deseeded and chopped
- ½ medium onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons Worcestershire sauce
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 1 egg, lightly beaten
- ½ cup quick-cooking oats
- ⅓ cup ketchup
- 7-10 slices bacon
- 2 tablespoons spicy brown sugar dry rub
Step 1. Mix
Combine ground beef, green pepper, onion, garlic, Worcestershire sauce, salt, black pepper, egg, and oats to a large bowl. Mix well together.
Step 2. Shape
Shape meat into a rectangular shaped loaf for best results. Lightly grease a broil pan with olive oil and place meat inside.
Step 3. Place bacon
Coat the top of the loaf with ketchup liberally and place bacon slices on top, carefully tucking the edges underneath. Sprinkle spicy brown sugar dry rub.
Step 4. Bake
Bake for 1 hour or until bacon is crisp and the loaf is about 160 degrees. Remove from oven and allow to sit for about 10-15 minutes before slicing and serving.
Sink your teeth in moist, tender bacon wrapped meatloaf and enjoy!
