Ingredients:

  • 4 large chayote squash
  • 3 Tbsp. butter
  • 3/4 cup shallots, sliced
  • 4 cloves garlic, minced
  • Kosher salt
  • Freshly ground black pepper
  • Parmesan cheese, grated
  • Chives, chopped
  • Parsley

Step 1: Prepare the Squash

Wash the squashes thoroughly in running water and then peel them using a sharp knife. Afterward, slice the squash in half lengthwise.

Scoop out the seeds, place the squash halves on the chopping bird, and then slice the halves into multiple thin strips. Set aside.

Step 2: Sautée the Garlic

Take a large skillet pan and melt the butter over low to medium heat. Then, carefully add in the shallots and fry for about five minutes until they turn golden brown. Afterward, throw in the garlic and sauté the ingredients for another minute.

Step 3: Cook the Squash

Once the pan is ready, it’s time to cook the squash. Throw in the chayote squash strips and cook for about five to six minutes.

If you’re going for soft, juicy chunks of squash, limit the cooking time to around three minutes. If you want crispy, savory squash strips, however, fry them in the pan for at least five minutes.

Step 4: Serve and Enjoy

Remove the squash from the heat and serve on a plate. Drizzle with salt, pepper, parmesan cheese, parsley, and chives to taste.

Note: You’re free to cut out these ingredients if you want a mild, light side dish.

Bonus: Where to Find Chayote Squash?

Having trouble finding chayote squash in your go-to grocery stores? Try local markets. Farmer’s markets carry more of these than large groceries do.

Or if you want, you can try planting your own patch of chayote squash. That way, you can enjoy chayote recipes any time you want.
