Ingredients:
- 1/2 cup raw sugar or brown sugar
- 1 1/2 cups honey
- 1/3 cup coconut oil
- 1/4 tsp. fine sea salt
- 1 cup 100% all natural crunchy peanut butter
- 2 tsp. vanilla extract
- 4 cups crisped rice cereal
- 2 2/3 cups old fashioned oats
- 2/3 cups ground flax seed
- 1/2 – 1 cups mini chocolate chips
Step 1. Mix the oats, crispy rice cereal, and ground flax seed in a large bowl. Stir until well combined. Set aside.
Step 2. Place sauce pan over medium heat and pour in honey, coconut oil, and sea salt. Bring to a boil.
Boil for exactly 1 minute to ensure that the mixture combines and sugars dissolve. Stir the whole time.
Step 3. Take pan off the heat and add in the crunchy peanut butter and vanilla extract. Stir until smooth. Pour the entire mixture over your bowl of oat/crispy rice cereal mixture. Stir until well combined. Set aside and allow to cool for about 5-8 minutes.
Step 4. Line a cookie sheet with parchment paper.
Step 5. Pour the granola mixture onto the cookie sheet, spreading mixture out evenly.
Step 6. Tear off another piece of parchment paper about the same size as your cookie sheet and place on top of your granola mixture. Place another cookie sheet over the parchment paper and press down the granola mixture. This will help to compact the granola so that the bars will stay together and not fall apart.
Step 7. Remove the parchment and cookie sheet, and sprinkle chocolate chips over the now flattened granola mixture. Then, repeat step 6 so that the chocolate chips get pressed into the bars.
Step 8. Let the granola mix finish cooling in the fridge or, if you don't have fridge space, the kitchen counter will do.
Step 9. Once completely cooled, slide mixture out of the cookie pan and cut into bars.

Need to know how much per serving/ how many servings does this recipe make, or what size should the cut bars be?
Thank You.

I don’t normally bother with these sort of things but this looks good and reasonably easy – bit worried about both sugar and amount of honey content, so after the first attempt I might try reducing some of that – any comments on this please (like most things everything is possible and down to personnel taste so it is probably OK ’tis just the execution that could cause a few problems) Many Thanks for putting it up

I take it these would be the chewy variety. How long would the granola mixture need to bake for crunchy bars? If baking of course the chocolate chips would need to be omitted, or raisins or dried cranberries could be substituted.
