How To Make Cream Cheese From Scratch

Ingredients

  • ¼ cup of water
  • 1/3 teaspoon of salt
  • 3 tablespoon of whey (optional)
  • 3 tablespoons of vinegar or lemon juice
  • 1 liter of fresh milk

What You’ll Need

Step 1: Mix the Water and Vinegar

Mix the vinegar with water in one cup and set it aside.

Step 2: Bring the Milk to a Boil

In a large cooking pot, pour the milk and bring it to a boil. Keep stirring it occasionally.

Once the milk is already frothy and has already risen, turn the flame off. Then, stir it gently for another one to two minutes.

Step 3: Add the Vinegar Mixture to the Milk

Gradually add the vinegar mixture to the milk until the whey has already separated from the paneer. Stir it gently.

REMINDER: You will know that the whey is already separating from the paneer once the curd starts to form.

Step 4: Strain the Paneer From the Whey

Grab your strainer, and use a cheesecloth to filter the curd from the whey. Let the curd dry by itself, and do not attempt to squeeze it.

Let the paneer rest for around 12 to 24 hours at room temperature.

TIP: Do not throw away the whey. You can use it to knead dough or as an ingredient for fruit juices.

Step 5: Rinse the Paneer With Water

When you notice that all the whey is already drained, wash the curd with cool, tap water. This will remove the sour taste of the whey.

Let the water drain from around 15 to 30 minutes.

Step 6: Blend the Curd With Salt

Mix the curd with salt then blend it for five to ten minutes. This will help break down the curd further.

Then, add two to three tablespoons of whey. Keep blending the curd until it is already smooth and creamy.

Step 7: Your Cream Cheese Is Ready to Serve!

Pair it with a warm slice of bread, or use it as toppings for pancakes. Keep the rest of your cream cheese in the refrigerator.

Since our cream cheese is made from fresh milk, we suggest that you consume it within 10 days.
